One of my very dear childhood friends celebrated "Ukrainian Christmas" complete with caroling and the 12 Meatless Dishes. Her family home always smelled like something delicious was cooking.
I tried to find a satisfying recipe for Gluten-Free Perogies in her honour but all the recipes are either not vegan (which I am) or use xanthan gum which I'm not 100% convinced is that great (often made using GMO corn I hear) so I am going to try to invent one using agar agar or chia seed and the flour I have around here (rice and amaranth). But for today, I will pass along links to the following Gluten-free Perogi recipes:
There are lots of others on-line but these looked pretty good! Another idea is to use gluten-free lasagna noodles and make "lazy perogies" just layering the noodles with whatever filling you love in your perogies (I love mushroom and I also love-- get ready for this-- sauerkraut!
